Try making some funky fajita creatures to help you eat more veggies. You'll need an adult to help you make them. To make enough fajitas for 3-4 people you need:

  • 1 tsp canola oil
  • 1 onion
  • 1 clove of garlic (minced or crushed)
  • 1 red pepper
  • 1 green pepper
  • 3-4 mushrooms
  • 1 cup low-sodium canned black beans, rinsed and drained (optional)
  • beansprouts
  • dried oregano
  • 4 tortillas, preferably whole wheat
  • lettuce (optional)
  • sour cream (optional)
  • salsa (optional)
