Funky fajitas
Ingredients

Try making some funky fajita creatures to help you eat more veggies. You'll need an adult to help you make them. To make enough fajitas for 3-4 people you need:
- 1 tsp canola oil
- 1 onion
- 1 clove of garlic (minced or crushed)
- 1 red pepper
- 1 green pepper
- 3-4 mushrooms
- 1 cup low-sodium canned black beans, rinsed and drained (optional)
- beansprouts
- dried oregano
- 4 tortillas, preferably whole wheat
- lettuce (optional)
- sour cream (optional)
- salsa (optional)
